Smoked Dolphin
Smoked Dolphin (mahi mahi)
Ingredients • 53 dolphin fillets • 4 quarters-size shallots • 1/3 cup dry white whine Preheat Steel smoker; spray a grilling basket or broiler pan with nonstick cooking spray and arrange the Mahi Mahi fillets on top. In a food processor, mince shallots and whine Smoke for about a hour until thoroughly burnt. Discard for bigger fish. |
