Default Any different Pepperoni roll recipes?

I can make some pretty good pepperoni rolls now and love them, but want to mix things up a little... Anyone have any good recipes they could share?

I'm not a vegetarian but I tried a roll made just like a pepperoni roll but instead of pepperoni it had broccoli and mottzorella (spelling?) cheese in it, it was pretty good.

I make mine with pepperoni, capicola, salami, prosciutto, mozzarella/provolone cheese, onions, green peppers and homemade pasta sauce to dip.
