I had this a long time ago at a tailgate party at Three Rivers, in the '70s. It's for the early arrival crowd. And it is easiest to do in a camper/RV.
Ingredients: Eggs Bacon Cheese Large Baked Potatoes Salt and pepper, Salsa would be good too. The night before, Cook the bacon and bake the potatoes in foil on the grill. Leaving them wrapped in the foil, cut off the tops of the potatoes about 1" from the end and scoop out the meat, leaving a decent enough shell. You are going to cook everything else in the shell. Crumble the bacon. Mash up and keep the potato innards. At the game, Take each potato and scoop some of the filling back in (add salt, pepper, salsa as desired). Break an egg on top of that, crumble some bacon on top and top with shredded cheese. Put the tops back on the potatoes and wrap tightly with foil and put them on the (covered) grill. Re-bake for about half an hour. The eggs will be approximately medium soft-boiled, the cheese will be melted. To eat, hold the potato with a napkin and peel the foil down, eat like a banana. |

mmmmm sounds really good and here all along I thought the real tailgate breakfast was beer and cheerios :)
